As for food, expect the unexpected. Think a pick ‘n’ mix of ridiculously delicious Spanish plates, inspired by the nation’s northern Basque Country, which lends itself to a tapas-style dining culture – a social ritual rooted in community and conversation.&nbsp;Food is cooked over open-flame (make sure to bag a front-row seat in the dining room) and the giant sharing platters are a must. </p>

Everything on the menu is sourced locally or, ideally, grown in the raised beds at the back of the building. Try to resist the lure of the chopped beef tartare or their signature trifle. Good food is guaranteed, but so is a deliciously cosy bedroom once you’ve had your fill of good wine and a good time. The décor is enticingly modern yet vintage in style, with exposed beams, a muted palette, and tartan textures.&nbsp;No better place to sleep off a food coma if you ask us.</p>

Come hungry though &#8211; there are five courses to work your way through, Thu to Sat for Lunch and Dinner. Couple that with the award-winning spa and stunning country walks right on the doorstep, and you&#8217;re on to a winner.</p>

Old school charm, insane levels of culinary innovation, and 11 riverside rooms make this a very, very special foodie escape indeed.
