Each bag has three or four key flavours listed. Take my favourite El Tambo. It has a delicious blend of caramel, nut, chocolate and honey, a SCA Cup score of 85.75 (a rating given by the Speciality Coffee Association) – 80 plus points are classed as speciality coffees, 95 and above are seriously swanky and grower details too. So just like wine and vineyards, you get to learn exactly where your coffee beans have grown and who they have been handled by.

The ‘Lab’ is their super-whizzy ‘Novoroaster’ – German kit that embodies the principles of being methodical, precise and consistent; batch after batch. ​Using a healthier ‘hot-air’ method, the result is a smoother flavour and personalised service. The bitterness that can overpower some roasts but these coffees are seriously smooth.
